French Pondicherry Vodouvan Seasoning
In the late 17th century, the French East India Company established a presence at Pondicherry, in South India. French-influenced Vadouvan Curry is a sweeter, shallot-based version of Tamilian curries Parisian cafe-goers delight in curried chicken salad seasoned with this blend. It has a rich savoury flavour that is more familiar to Western palates than many Indian spice mixtures. In Tamil cuisine, Vadouvan is used for tempering dishes like brinjal and avarakai poriyal and all sorts of kuzhambus. It gives these dishes a special flavour.
